Vegan Breakfast Ideas!

Hello! Today I’m here with 3 delicious vegan recipes that I’ve been loving. I have become a big avocado fan, and since becoming vegan I have discovered some recipes that all incorporate avocado that are refreshing, healthy, and tasty! I hope you enjoy these recipes with quick and easy steps. They are great to bring for lunch to work or school. Now onto the recipes!

 

Recipe #1: The avocado, tomato, and cheese bagel

 

What you’ll need:

 

  • The bottom half of a bagel (everything bagels taste great with this recipe)
  • Half an avocado
  • A pinch of salt
  • One tomato
  • A slice of vegan cheese (Follow Your Heart has delicious vegan sliced cheese)

 

Steps:

 

  1. Toast the bagel half as much as you usually would (this will make sense later)
  2. While your bagel is getting all toasty, cut a whole avocado in half and score on side of it. Get a spoon and place it in a bowl. Next, use a fork and mash the avocado up and add a pinch of salt.
  3. Take your tomato and cut a fairly thick slice.
  4. Then, take your half toasted bagel, spread the avocado on the bottom, place the tomato, then the slice of cheese on top.
  5. Lastly, place your masterpiece back in the toaster just long enough so the cheese can melt.
  6. Enjoy your refreshing sandwich that will keep you full and energized until lunchtime!

 

Recipe #2: Classic veggie sub

 

What you’ll need:

 

  • A sub roll
  • Half and avocado and a pinch of salt
  • Vegan cheese
  • One tomato
  • Lettuce
  • Spinach
  • And a bell pepper

 

Steps:

 

  1. Cut open your bread
  2. Dice half an avocado, mash it up with a fork and add a pinch of salt.
  3. Smear the avocado spread along the bread
  4. Next, I like to lay down the vegan cheese so it has something to stick to
  5. Then, add the bell peppers and tomato.
  6. Lastly, add the spinach and chopped up lettuce.
  7. Enjoy!

 

Recipe #3: The veggie wrap

 

What you’ll need:

 

  • A tortilla wrap
  • Hummus
  • Spinach
  • Tomato
  • Finely chopped carrots
  • Bell peppers
  • Corn salsa (optional)

 

Steps:

 

  1. Lay your tortilla out and spread the hummus along the middle
  2. Sprinkle some corn salsa
  3. Place your spinach and veggies on top.
  4. Finally, wrap it up and enjoy!
